Really depends on the size of structure you're building but the minimum is 1.25x15"

The top plate measures 3.25 x 12 inches. You would usually set a beam on a bracket like this, so a 4x nominal beam would work great. If your attaching bolt is long enough to slide this bracket farther from the tree, you could put a 6x or larger on it also.
