Q: is the blade replaceable?

The blade is held on with four phillips head screws. I have removed it to clean it and hone the edge a little bit. If they sell a replacement blade then yes it. However, I would recommend sharpening or honing several times before needing to replace it.

Q: How many sheets can this cut at once?

I bought the device to cut 1 page at a time. In response to your inquiry, however, I attempted to cut 20 pages at once of 8.5"x11", copy machine/laser jet printer type white paper. The paper was positioned in the portrait mode and the device cut a off 1"x11" strips with some resistance. Nevertheless, it worked.

Q: Is there some sort of clamp to hold the paper in place while you cut?

No. You hold the left edge of the paper in place with your left hand and cut the paper with lever. There is a latch to hold down the lever when not in use. I bought this for my daughter for her first grade classroom. It is a very sturdy paper cutter and she likes it very much. No need for a paper holder.
