How long do these keep in the frij once opened? If they don't keep long that way, can they be frozen?

They are supposed to be kept in the pantry with the dry foods. After I boil them and prepare the spring rolls, I suppose they can sit in the fridge for a few days. They don't last very long in the fridge because we end up eating them immediately. :). After I open a package, I store them in the pantry in a gallon sized ziplock bag.

Yes, you can absolutely fry these! But they are much harder to master (compared to wonton rolling papers) when used to make Vietnamese eggrolls. However, in my opinion, these rice papers in general make much tastier fried eggrolls because they fry up puffier and lighter.
