Does this cool quickly like parchment paper would?

Sorry I've only used them once, and I don't believe they cool as quickly as parchment paper.

What are the dimensions of the circles in inches on the macaron mats?

Can they be used to line a steamer when I steam sweet/sticky rice?

The mats can not be cut due to the fibers in the mat. Plus the mats like to lay flat and may tear if you try to bend them into a steamer. Have you thought about muslin (reusable cheesecloth)?

I see only for baking, but can I put things like fish sticks, etc. on them?

My experience with silicone mats is that they hold odors. If you are going to use these for delicate macarons I wouldn't bake something like fish on them. I have 8 silicone mats. I have a couple that smell cinnamonny from cookies and a couple that I used for things that have have a more pungent smell. Most things don't pick up the odor but macarons...well, I just wouldn't risk it.
