Is this flour coarse?

It is coarse but more flaky than anything. Watch your step kid and note that it is NOT flour. It is potato starch which has different properties and uses than potato flour. So make sure you know what you need for your recipe and remember to PROTECT YA NECK!

Can you eat this uncook or raw?

I've seen a lot of mixed reports on this. Many starches say that they "should" be cooked first, but most recipes are for drinks that don't require it. Some starches need to be cooked in order for them to thicken your recipe. I can't recommend eating it raw because of so many reports of gas and bloating, iron deficiencies, and blood-sugar levels being unpredictable. The best advice is to cook any starch before consuming.
