Are these plastic coated? What makes them "nonstick"?

No plastic - they are coated/embedded with silicon. Plastic would not be food safe in the oven. You can buy parchment paper on a roll near the foil at the grocery store but it is a pain to work with. These precut sheets are cheaper, easier to use, and can be stored in the box they come in - just slide one out when you need it. They are the perfect size for a cookie sheet and can even be reused if you use them for something non-messy like heating up rolls or something. I use these all the time and will reorder when we run out!

Can these be used in a air fryer?

People have said that they have used them in air fryer. I just got my fryer and have not tried it yet. I would expect it to work in fryer if you don't have too much paper and it doesn't touch the element.
