I bought this book primarily to up the game on my grandsons's palettes for Mexican delights that they can help me prepare! Recipes look basic and can't wait to get started! Bookish Days delivery and packaging were perfect!

My family all enjoys Mexican food, and I appreciate how simple, quick, and convenient they are, but we’ve eaten through my entire repertoire (ground beef tacos, bean burritos, chicken enchiladas, cheese quesadillas, and chile rellenos) so many times, it’s gotten a little tiresome. Also, sad to say, they now seem about as authentically “Mexican” as Taco Bell. I’m really enjoying 200 Easy Mexican Recipes, which moves away from (what I think is) older, sauce heavy, New Mexican-style dishes, to a fresher, lighter, more authentic and/or California twist on Mexican favorites. For example, we’ve been loving the many seafood dishes included, which are often served with some fresh cilantro and a squeeze of lime, like the Shrimp Quesadillas, Grilled Tilapia Fillets (with Tomatillo Avocado Salsa), and Shrimp Ceviche. Each are fresh, inviting, and so fast to make.Even the heavier recipes, like the Tacos el Pastor, seasons the pork in a bright and flavorful pineapple marinade. The clear directions help make each recipe easy, and extra tips in the sidebar for each recipe include helpful hints like time-saving substitutions. Me, and my family, really appreciate 200 Easy Mexican Recipes, with it’s delicious and fresh flavors!
