Ta Dah, it's enchilada night!
Not quite as good as homemade, but for a quick easy dinner plan this can't be beat. Just open the can and ta dah it's enchilada or burrito night! Good flavor, not overly spicy.

Delicious Medium Red Sauce, Worth Buying by the Case!
I absolutely love this Las Palmas Red Enchilada Sauce in Medium! The flavor is perfect—rich, tangy, and just the right amount of spice for my enchiladas and Mexican dishes. The medium red version is so hard to find locally, so I rely on Amazon to get this 24-pack case, and it’s totally worth it. I wish I could find it in stores or in smaller quantities, but the taste is so good that I don’t mind stocking up. Each 10-ounce can is just right for a family meal. If you’re a fan of authentic enchilada sauce, this is a must-have. Highly recommend grabbing the case if you can’t find it elsewhere!

HUGE cans, makes a good enchilada casserole
The other night my husband got hungry when I was away. When I came home, he had opened up 2 cans of beans and the can of Las Palmas Enchilada sauce that I'd been saving for chicken enchilada casserole, which is what I use this sauce for. He complained that it was NOTHING like the red tomato sauce the Mexican restaurant put on his burrito. I explained that was RANCHERO sauce and totally different. He said "well this one sucks, don't buy it again." He complained that it wasn't tomato-y enough, or hot enough, to make his plain beans better, which is why they were in a mess all over my stove. The mild is very mild, it is spicy, but without much heat at all. Luckily I still had half the can, because that's all I use for my casserole dish. I do not like this sauce alone, but when mixed with tomato sauce and paired with corn tortillas and typical enchilada fillings, and topped with sour cream and/or queso fresca cheese it is great. The cans are big, too big for me - they are 28 ounces. I do like more of a tomato taste in my sauce, so I mix mine half and half and simmer it. The sauce isn't very thick, and the flavor is very deep, and the color very dark red. I wish they'd make it in a box, because the cans detract from the taste a bit, in my opinion. Some people thin it down with chicken stock. Most people I know don't use it just plain, though I am sure there are people out there that do.

Good flavor, but...
It has good flavor, not too spicy. I bought medium and had to add heat and spice to it. And it is soooooo watery. So thin. That was a bit of a disappointment. But my enchilada casserole turned out quite good regardless.
