Can I have the signal transmit wirelessly to just the two bookshelf speakers while the signal is transmitted through speaker wire to other speakers?

The speakers can be wirelessly as long as they are powered speakers. You may get a mini amp for the speakers. The signal transmission is between two amps.

Yes! It should work fine if your receiver has a low level output (preamp out or record out) and your amplifier has a preamp input or other low level inputs (i.e. CD, vhs, or tuner etc.).

Can I pair one transmitter to two receivers to get stereo music out to other rooms from my main amp?

You only need one receiver for stereo. Two receivers will support two separate stereos, but I have not been able to fine a source for extra receivers.
