Q: Can I use this gauge to check tire pressure while airing up too?

Technically you could, but it would be a pain because this tool has to screw onto the valve, and then unscrew and remove the valve core before it will read the psi. So it's not a practical tool for a quick psi check. It is specifically designed for quickly and accurately deflating a tire to a specific psi.

Q: will this gauge read down to 2 psi?

It will but how accurate I don't know I would look for a good low pressure liquid filled gauge for that purpose
