how much coverage does this pint unit cover (i.e., whole head and neck)?

Size depends of course but for an average size head and neck it is pretty close. It will be very thin. If you want to be sure of coverage and durability to remove ide suggest 2.

Can an impression of the sole of my foot be made in the silicone then trim the molded silicone down to make an orthotic for high arches?

Yes this product is safe for the skin and you would painted on but the best way that I know how to make an impression is to use alginate and then you would put ultracal 30 or hydrocal and then clean the impression with a rasp. then you would take the mold put it upside down in clay build a wall up against the mold height would be as thick as uou want it for silicone then I would use mold star 15 for the silicone then clean it an put in shoe
