Yes they are contoured canvas micarta and fit in the hand very well and give a very secure grip.

What kind of steel is this knive's blade made of?

I believe mine is made from N690 stainless steel. My knives are subjected to substantial abuse and this has held up excellently.

Quality on the sheath?

Well constructed. Good looking, in a rugged non-fussy way. But what you really want to know is how well it holds and releases the knife. Mine is secure. I can shake it upside down and the knife stays put. When I pull the handle, the knife comes out. Again, no muss, no fuss. But there is a catch; it is made of leather. There will be variations from one sheath to another. I can’t promise that yours will be as perfect as mine, but I can promise it won’t be due to poor quality.
