Would this white chocolate be good for the top layer of peppermint bark? Add some peppermint extract and sprinkle the top with crushed candy canes?

I have used it for this. I recommend adding a few drops of peppermint oil, not extract, and I mix some of the crushed candy canes in. My vegan/allergic to dairy friends appreciate it.

White chocolate doesn’t have caffeine because it doesn’t contain cocoa solids. Only cocoa butter (fat).
