Is this salt flaked? It doesn't show on the container if it is or not.

Not flaked but relatively coarse. Remember that fleur de sel is to be used ONLY as a finishing salt. Outstanding product!

What is the difference between this and the course blue pkg? I can't seem to find an explanation

I don't know what you mean by the blue pkg. Would it be what they call "gros sel"? if this is the case, it would be a coarser salt that you could use for cooking but not to serve on the table. It is also less refined but very healthy.
