Is the cover flexible enough to fold backward? So that you are really just seeing the paper? Will it stay in this position?

It will fold backward, but it doesn't fold back perfectly flat (close but not quite). It will stay in the folded back position, but if you really need it to fold back as easily as a notebook, this probably isn't the best choice. But the cover is very soft and flexible and gets more so over time.

Is the refillable cover made of leather??

The Large size is not, it is vinyl. The smaller "medium" size is a leather like cover.

Can someone link me to a compatable notebook to refill this cover with? Preferably something over 80 pages and cheaper then the cambridge one?

I bought this to use with a 2 subject 9.5 x 6 in spiral notebook and it works great! I wanted something I can refill. My notebook is only 100 pages but I think a 150 page notebook would work too. (I'm going to post pictures with my review)

Does it have a hard surface for writing on-the-go or is it a flexible surface?

Hard surface to write on if agianst something like your thigh when sitting down. But not enough to really write while holding it in the air. Clip broad or binder by tul while work better for you.
