I also use this in place of (single strength) lactose-free milk for extra protein in casseroles, bread puddings, in place of water for cooking oatmeal, etc. as well as in recipes calling for evaporated milk. The packaging is easy to open, pour, and reseal. The only downside is that it can go bad (yellow, lumpy, bad smell) if you store at room temperature and don't use it up in a reasonable time.
