Any non-toxic sources of candied cherries? all of these chemicals and hfcs - bleah!

Assuming you consider sugar toxic, then no there are not any non toxic varieties. Same with preservatives, the sugar makes them susceptible to bacteria so preservatives are needed. You can always buy cherries and put them in a very slow oven and dry them yourself. This would be costly as USA cherries are out of season currently and the fuel to run your oven for such a long time is not cheap. You can always buy these cherries and rinse all the extra stuff away! These are great cherries for fruitcakes and cookies!

How many cups of chopped cherries is an 8oz package? Recipes call for cups, not oz...

It's about a cup in the 8 oz package. As you can imagine the measurement for solids vs liquids is not the same, but in this case, it works out fine. I used them for a recipe recently and they worked out great! Incidentally, it was a joy to not have to chop them up, myself!

Can these be frozen till next November?

I imagine they could be frozen but I've never tried it. Look for the "Use by" date on the lid. It is usually at least a year out from the date purchased (since candying fruit is intended as a way to preserve it.) If I don't use all my candied fruit at Christmas one year, I just keep the sealed containers in my refrigerator until the following year. As long as you use them reasonably close to the "Use by" date, they'll be fine.
