Makes fantastic vegan kefir with Kirkland Soy milk.
It comes out thick, tangy and fizzy. The kids don't like soy milk, but they love the Kefir made with this starter. Each packet makes 3 quarts, but when you make the first batch, you can use that inoculate additional batches, so I buy Kirkland vanilla soy milk by the case (12 quarts for $17 in 2026) and use one packet to ferment first 2 quarts, then use those to ferment the test of the case, and keep them in the fridge for the 5 days it takes the kids to drink it. Then I use a fresh starter packet for the next case. I start off by splitting a packet directly into two bottles, sealing them up, and letting them sit at 80-84F for 24 hours. Then with a sterilized glass and syringe, gently shake one of the containers, pour into a clean glass and transfer 30ml from the glass into each of 10 more quarts. Vivo says you can do this once with good results, and that's been the case for me. It's delicious after 24 hours, but it gets even better after a day or two in the fridge. Highly recommended. NOTE - Warning. I discovered that if you're not used to Kefir, it's possible that you'll experience a day or two of bloating, and possible headache, as portions of your microbiome due off and are replaced by that provided by the Kefir. It's good to start slowly. My kids had no issues, but I did.

Easiest. Kefir. Ever!
I use one packet for a 59 oz/1.84 qt/1.74 L carton of ultra-filtered milk that’s also labeled as lactose-free. It turns out super-rich with a lovely mild flavor (not tart or otherwise bracing). I set aside about 1/2 cup of finished product to inoculate another carton, so really I use one packet for two cartons of milk. So laughably easy to prepare-makes using kefir grains a regrettable memory. Unlike with grains, which multiply and can become quite the daily project, I take a break from making kefir by simply not reaching for one of these small packets of magic powder, and resume when I’m ready for more. I also appreciate the replicability of kefir with these packets, unlike what I encounter with grains (I’ve accidentally made kefir “cheese” more than once or twice🙄). Relatively pricey, but worth it for dependably repeatable (and delicious!) results without the upkeep of using grains.
