How do we know it was made in Germany if it lacks certificate of authenticity and no seal showing where it was made/sourced?

The crock I used was not the thickness that was touted and it broke when I was cleaning it after a batch of fermented cabbage. Don’t buy it.

Question 2

What should the diameter of the stones? for the 7L pot?  The one I purchased came with 5 inch diameter stones and the cabbage comes through them

Both the 5 L and the 7 L K&K pots have 5 inch stones. They come with small stones because of the curve in the pot. The small stones fit the narrower top portion of the pot better than the middle because the manufacturer assume people will make a full pot. Be sure to fill you pot only 80% full. Question 3

Can anyone tell me if they made kimchi in this vessel, an how many heads of Napa cabbage will it hold. I'm looking to make  at least 6 pounds

I always buy 10-12 lbs of green cabbage for kraut for the 7L (always weigh at the store!).  I have done this about 4 times now and would not do less or more.  This could be about 4 to 6 heads.  After coring, shredding, salting, and packing firm - there is plenty of room to put in the full leaves, weights, and then cover with an inch or two of water over the weights.  It leaves about 2 inches of air inside below the inside roof of the crock (not the lid).  I am not sure why others are saying only 3 or 4 heads unless different cabbage packs differently or if it softens differently than green cabbage.  I do let my shredded cabbage sit about 30 minutes or more in a different bowl or tub before I pack it inside the crock.  It softens more this way and is easier to pack and I can get more in that way.

Any recommended recipe books-for complete novices, including but not limited to: pickles, saurkraut and kimchee?
