Would these work well for stamping into clay?

yes. let it dry first until it is nice a land firm. then you can decide whether to very gently tap them or just press them for just the letter, or that new chic etsy kind of style where you press it all the way until it leaves the outline of the stamp itself as well. many people like the “hand made” look. You can even vary the stamps by about 10% too high, 10% too low every 3rd letter or so for an even more hand made kind of whimsy that many people tend to find very attractive nowadays.

Might be dumb question but which is the smaller set?

5/32 is smaller than 5/16. 5/32 inch is 0.15625 in decimal inches or about 4 mm. 5/16 inch is 0.3125 in decimal inches or almost 8 mm.

I need to put a vin number on a boat trailer would these work.

It would depend on what kind of metal the boat trailer was made of. Some metals may be too hard to make an indentation with this kit. A metal ingraving tool may work better.

Will these work for stamping thin steel?

they do stamp the steel, however the are too big if you are stamping blank bars for jewelry. the whole letter will not fit. :(
