would you need a bedroll or mat for laying on the ground or is there enough padding to lay right down?

It's called sleeping bag insulation - not padding. It works by having air pockets - which are collapsed when not much weight is put on it. Your body weight collapses the insulation in the bag under you. Hence the advice to have something under you for insulation, and comfort too. Even a heavy coat on top ruins the insulation there.

Is it easy to stuff back in?

We are very satisfied with the product. If you roll up the sleeping bag tightly it is easy to stuff it back into the bag.

What’s the lowest temperature you can use this in?

It was just above freezing in FL when we used them the first time. About 34’ and we slept very well. The hooded part is great too.
