Has anyone used this to cut 5mm foamboard and if so how easy was it?

Sorry, I've not used it on any foam board. Card - it's very good. I've just looked at the cutter block and I'm not sure you will get enough depth on the blade to cut through 5mm.

What thickness can it cut to?

I've just measured the depth of the cutter when depressed, it is about 2mm. It cuts 1.5 mm card with ease, but it is necessary for the cutter to pass beyond the depth of the card to make a clean cut, you cut from the back of the card to the front - therefore the extra depth is necessary. I doubt that it would cut 2mm card cleanly.
