I took apart 3 whole chickens with it. Still razor sharp. Easy to use. Tip slips into joints easily and cut tendons with no effort. Actually, it's so sharp that if you are not careful, you simply slice effortlessly into chicken bones, which I don't like. I like my chicken bones whole/uncut. But anyway, sharp is good for this deboning knife.

Nice knife, very sharp and seems to be a solid made product not like some of the other cheaply made ones, you know the quality ones the second you pick them up, it's very sharp and flexible which is what I needed for fileting fish, slides right down the skin in one pull. Still waiting to see how long the edge keeps sharp but so far I love it. Good value for the money.
