Does the Bruder action figure fit in the cab of the truck?

Yes, all 1:16 scale figures will fit.

How do you remove the container off the truck? I can’t figure it out and there’s no instructions

There are four red levers at the bottom of the container. You must pull each one directly out toward you (each one comes out about an inch). Then you can push them 90 degrees to the floor to raise the container and the truck can then drive out from under it. The container can then sit there on the four red legs if desired while the truck is used.

Does the top come off the trailer for easier access and hauling larger creatures such as dinosaurs?

No the top is not removable but the truck itself is a larger size.
