Eugurt Instructions:
1.	Mix/Blend:
Whisk or blend pouch contents, 3.5 cups of COLD water, and ¼ cup of sugar (optional).  Sugar may be adjusted, omitted, or replaced with the sweetener of your choice.  Non-nutritive sweeteners, if used, should be added after fermentation.
2.	Heat:
Heat in a saucepan on medium high using a small burner, continuously stirring/scraping the bottom with a spatula.  When mixture foams and rises (at or above 180 F), promptly remove from heat. (Note: A microwave or electric pressure cooker can also be used.)
3.	Cool.
Cool to between 100 and 110 F—place pan into a cold water bath to speed cooling.
4.	Ferment:
Add starter culture – 1 Tbsp. of yogurt alternative, prepared Eugurt, or probiotic drink**, or a freeze-dried non-dairy starter culture from www.eugurt.com.
Stir well and pour into a quart jar or set of portion jars, cover, and incubate in a yogurt-maker or electric pressure cooker with a yogurt setting.  Incubate 6-8 hours or as needed until set (firm and opaque).
(Alternatively, incubate in a thermos, placed into a cooler with 1-2 inches of hot tap water, or place jar or jars in the oven with the light on for a lower temperature/longer time fermentation.)
5.	Chill and enjoy!
Refrigerate.  Once chilled, add your favorite fruit or nut mix-ins, alternative sweeteners, or enjoy as-is.

**Kombucha and kefir excluded; yeast interferes with the set.

Does this have probiotics?

Not "as-is" - you add an amount of probiotics to it to a make a fully probiotic dairy-free, soy-free yogurt alternative.  Eugurt leaves the use of probiotics to the customer who can use whatever probiotic they choose (strain or source) and in what form (drink, capsule, freeze-dried packet).  This also allows Eugurt a much longer shelf-life as it is a powder mix.  You can also freeze down Eugurt (once made) and use as a probiotic starter for other batches or non-dairy yogurts.

Can this be used in a yogurt maker?

Accepted Answer

Yes, if you're talking the incubation/ fermentation step. It will be set in as early as 6 hours. The heat step, on the other hand, should only be done on the stove with continuous stirring/ scraping to avoid scorching. You can also heat in the microwave without fear of scorching, but should watch it carefully because it will rise abruptly once it's above 180.
