On softer shelled crab like blue crab the blades are almost effortless to control and slice right through with little pressure. Even on harder crab, like Dungeness, it takes minimal effort. The design of the handles make these scissors very controllable, even with slippery hands. The overall strength and sharpness of these scissors keeps the scissors and the thing being cut from trying to twist in your hands. I haven't used the CANARY Crab scissors for anything but crab but it should be trivial for them to deal with shrimp and other softer shelled items. These are beefy scissors and are the perfect size for my hand and would probably be comfortable and controllable for those with bigger or smaller hands. The scissors are very easy to clean with just a little soap and water. Although they are a little more expensive than some other crab scissors I feel that they are more effective, stronger and easier to use than others I have used which, for me, makes them a better value than others.
