What is the shelf life of this?

I used these extensively in my bakery (now I'm retired) and they kept for a VERY long time, months to well over a year, as long as you keep the package well sealed, with desiccant included.

Are the egg whites in powder form? Or do they come in chunks like in scrambled eggs? If not how can you make scrambled egg whites from this product?

This product is in powder form and you would need to reconstitute the product by following the instructions on the back of the packaging.

Are your eggs UEP caged or cage-free?

Here is the first sentence in the Description of the product, 2lb (32 Oz) of 100% Pure, Non-GMO Dried Pasteurized Egg White Protein. USDA Certified, Humanely Produced from UEP certified egg farmers in the USA.

can this be freezed to last longer?

I really do not know. I have kept powered egg whites on the shelf for over 2 years with no problems. Freezing generally lengthens shelf life. I freeze everything from fiberglass resin to black bean burgers.
