It shouldn't be exposed to a temperature over 50 degrees Celsius. The honey will crystallize starting 18 months from now, which is normal since it is a pure non pasteurized honey.

Yes. Wonderful. Darker than most regular honey. I wouldn't call it 'bitter' but it is dark, funky, complex and just what we like.
