I'm still learning about what makes a good coffee bean. To me it's the outcome, a consistently smooth tasting cup with a nice aroma. If I can taste other notes like citrus that's a bonus.With this Rex coffee it consistently left a smooth cup even when I over extracted in my espresso machine I'm learning to use. Which hasn't been the case with other coffees I have tried this far. I've never had a bitter cup. The worst that happened was I lost the aroma and began to lose the crema.In a drip coffee maker the coffee needed a little more coffee than I usually used to make a cup. Otherwise, it was a little weak tasting. This may have been my fault in not grinding it right. However, just adding a tad more fixed the issue.Overall, I'd say this was one of the best coffees I've had to date.
