About 28 pieces, judging by the serving size and number of servings per bag.

Has anyone figured out how to determine the expiration date is yet?

With some of the Andes products it is hard to find. All the grocery items I send in have at least 120 days before expiration sometimes more. Unfortunately I don't have access to this product right now to check for you.

Are these white chocolate with pieces of peppermint?

That is correct. Super YUMMY! :)

Can these be used for baking as well? The baking chips version of this candy is no where to be found and I need to bake something.

When I ordered this, it looked like the candy, but it was the chips. I complained to Amazon. They refunded my money and told me to reorder. I did and once again it was the chips. Got another refund.
