How high did you fill the water level in the deep pan?

I filled them about 1 inch. The water does not need to have contact with the insert. It stays hot with the steam produced. Hope that helps.

Do they have lids or covers?

Hi, Sorry to say they do not come with lids or covers. I have found that the 18” Heavy Duty Aluminum Foil works just as well if not better than the standard covers or lids for that purpose. If your recipe tends to come up higher than the top rim of the pan I find the standard lids or covers don’t fit tight enough and their is always leakage when transporting. The 18” Heavy Duty Aluminum Foil always has plenty of excess over the top of the pan to tuck in nice and tight along the edges. Less chance for leakage. I hope this helps.
