One place states 8.5" & another 8.75". Which is it? And what size skillet would this most closely fit?

It is 8.5" it fits a 10-12 pan. I like it you can even use in bigger pan and put in the middle.I love this product. This is the better deal of all I found price wise.

How tall is this from base to top of handle? I would still want to use a splatter screen

It is approximately 3 1/4” from base to top of handle. A domed splatter screen would work.

Does the handle rotate or swivel or is it secure, so the press doesn’t swivel when you pick it up?

It is secure...does not swivel or move. The wooden handle stays cool but the cast around it gets HOT!
