Great Little Pans!
I got these with the plan to make mini cheesecakes for family gatherings so there were a variety of flavors. I got the stainless steel versions & was very impressed by their solid construction & durability; I honestly didn’t expect such good quality for the price & was pleasantly surprised. The latches are quality & snap tightly onto the bottom plate. I lined them with parchment paper to make cleanup easier & because I planned to vacuum seal and freeze them, which made moving easier. Though I used parchment paper, I don’t think these pans would leak without it. These are great little pans & I highly recommend. I’ve made 3 batches of cheesecakes in them & left a review to provide a few helpful hints for anyone with similar ambitions, be it family gatherings or bake sale fundraiser type events. Full disclosure, I’ve only used these for mini cheesecakes & have not tried to bake a sponge in them. I also haven’t tried with a hot water bath cheesecake (I don’t typically make those), but I think these pans would do fine in such conditions. 1. I use roughly 1/4 cup of a crumb crust (+/-), and each pan holds/equals roughly 1” of larger/regular sized pans, so if your recipe calls for a 10” springform, you’ll need 10 pans to hold all the cake batter (Edited to add: Some of my recipes were a little small for the 1”=1 pan, but it’s a good rule of thumb). I had to order another set to ensure I didn’t have any leftover batter at the end. I’d suggest getting a set of 10 rather than 8 for versatility. 2. Additional word on sizing - I added an additional 2-2 1/2 cup strawberries to one batch (20 oz extra strawberries in juice I thickened & swirled in) & there was plenty of room in for the extra strawberries (10” pan recipe still equaled 10 cakes) 3. I’ve used with a NY style recipe and am currently baking my first Philly style (containing sour cream, per Grok, though it also suggested the sour cream could also be considered NY style, so I’m unsure how to best describe it) recipe. I use a cookie sheet with a small rack in it (the kind you would use to cool cookies) to put all the little cakes on. This makes it easier to handle all of the cakes. I put a pan on the bottom rack & fill with water while I preheat & put additional water in the cookie sheet before I close the oven for a steam bath to prevent cracking. I put an additional pan on the bottom rack for additional water. 4. You should NOT need to adjust cooking times or temps for these sized mini’s. Mine came out perfect following the recipes’ instructions for a larger cake without any adjustments If you choose to line with parchment paper, have some scissors ready to trim your paper. It’s a little tedious but I like the easy cleanup (it can be difficult to get baked on cake batter and crust crumb out of the joints & lip, plus it keeps your pans tidier, long term). I hope these tips are helpful for anyone checking these pans out though I doubt anyone reads reviews for stuff like this (sry!). If I ever try a sponge in them, I’ll try to remember to update my review to include it.

Springform pans
This is the second set of springform pans that I have bought. These are great! They are clean release which is awesome for my cheesecakes. Would definitely buy these again.

Pretty good
Work better than I expected. There can sometimes be some very minor leakage but i'm not sure if that's normal. There is a few folds that if you're not careful, rust might accumulate and is hard to clean out but overall pretty good
