Will this work if I don’t have a middle headrest?

It should, I also don't have a center headrest and it is working fine for me. It has a Velcro strip along the length of it so as long as you don't overload it you should be ok

I tried to buckle the straps to the headrest. Maybe I’m just confusing myself, but I’m not understanding how to get them to buckle properly?

They don’t buckle to the head rest ,… It makes no sense for the clips to be there . They aren’t useful unless you have where it can buckle on the sides of the trunk . Good luck
