Always made pizza same day as dough was made. Now with higher gluten flours it makes sense to proof the dough for more crunchy outside crust and soft inside, for at least 2 days. These proofing boxes are superb for that. Don't know why they cost as much as the larger boxes but these work great in my refrigerator. The dough came out PERFECT! No skin on it and the dough was supple, easily workable and I was able to toss it without any problem at all. Highly recommend for those who want a true Neapolitin pizza. L'oro Del Sol are very nice and very professional. Single cover is not an issue. You can make plenty of dough with just one but if you have a party the second box will be just as good.
