This makes a very tasty curry and way better than any powdered mixes - but still not quite as good as a real restaurant curry. I don't stock ghee, but found frying the paste in butter instead of cooking oil made the taste richer and more authentic. I like full bodied curries and needed to increase the paste content by 50% more and used meat stock in the universal mix (as per supplied recipe) instead of water to suit my own tastes. 5 stars for taste, convenience and value for money - and being able to make a healthier curry than takeaways. Make the sauce base by either frying or boiling oniions, garlic, ginger, chilli, peppers, tomatoes etc and then blending together with the addition of ground spices as required. Then fry the whole spices, add the sauce base and Mr Huda's Universal Curry Paste. I like to make chicken, spinanch and fresh methi curry and this paste takes it to a whole new level.
