Will the side pockets fit a 40oz bottle that is 3.5 inches in diameter?

Yes. We were able to put a 26 ounce Yeti bottle in with room to spare

Can it fit a 15" laptop?

Possibly. I fit my 13” Mac, no problem. The computer compartment is stretchable. I would say yes, but tightly.

Do all the magnetic pockets have a zip closure ?

All outside pockets have zip closure besides side ones, which have pull ties. The magnet part makes it so the top of the zip pocket doesn’t flap around.
