This looks great but can you only cut the soaps one size or can I make fatter width soaps and cut them using this?

Yes you can. Losen the wing nut and move the block to what size you want then tighten it back down. Its easy to use and easy to clean. I just measured it and it shows it can cut a paper thin sliver up to almost 3 inches thick. I set mine to 1 inch for my standard bars and others at 1 1/4. Hope this helps
