On the pictures, it looks completely flat. Is there a typical angle between the handle and bottom flat part?

Hi, the shape of this spatula is flat and doesn't have angle between handle and flat "knife" part. I was looking for something exactly like that. It is comfortable to use when you want to take something small from the frying pan without scratching it and may be used to divide and spread too. I liked it.

Is the blade flexible? I sometimes need to use one to loosen a loaf in my breadmaker so it has to be able to bend.

This is very flexible. I use it in a bread maker to get the flour off the side when it is half way through mixing and it works perfectly!

How thick is the 'blade' ?

Not a lot. I guess about 1mm, 1.5 top. I use it to remove pizzas or cakes from the sheets, it's pretty good. The blade is not super hard though, so it gives you movement. I'd recommend it, I used it a lot
