Will this amp overpower a skar Ix 10 2 ohms?

No, start with the gain to zero, and only go high enough until right before clipping. leave gain there and adjust your bass volume with a knob in your dash, radio compartment, seat slot, etc. You will only over power if you turn the gain too high. otherwise it works fine. the problem is when you get a speaker that is rated too high for this amp. say 12" 500w RMS 2 ohm. then you'll end up turning the bass boost up to make it slam and the speaker will get fried from the "bad power" produced by this amp's bass booster. its creates peaks that are too high and will fry your speakers. so... lesson learned is get a cheap 12" 350w rms 2 ohm speaker (W12K5S2) but keep the bass booster under 2.5/10. worked great for me. ears hurt and neighbors come looking for the noise. cheap and easy.

Think it will be ok to put a wired down 1 ohm skar 8" to this amp?

No, the lowest this amp is rated for is 2 ohm. It can handle a 4 ohm load also but 1 ohm not to sure
