Will these stay on my head on a rollercoaster?

I can't answer that question specifically. Some of that will depend on how tight your glasses are without straps. I don't have a large head and with glasses that fit in a fairly standard way, these straps don't provide a particularly snug fit, but they've yet to slip off. I'm used to tight fitting safety glasses that include an elastic strap so I may be the wrong person to ask.

Will these work on gatorz glasses?

It depends entirely on the thickness of the temple tips, what material they are made of, and how clean they are. Check the product info. They state the minimum recommended thickness. You can check the thickness of your temple tips using calipers. Or, you could measure the circumference with string and a ruler and divide by 2pi. The measurement might not be as accurate this way. I found these work best when the temple tips are very clean and dry. After 2 weeks, enough oil from my hair had gotten into the interface between the rubber and the temple tips that they started falling off. After cleaning really well, everything is better. I imagine plastics will hold oil better than metal, but metal might be harder for rubber to grip. I'm not sure. I don't have multiple pairs to experiment with.

Yes, I believe thes would work on roller coasters. Your glasses won't come off with these unless you pry them off your head.
