This is a really great fillet knive , I have been cutting fish for many years . I own a commercial fishing boat and recently donated over a thousand pounds of fish to glide church in San Francisco. I bought this knife to try it out when I was reaching volunteers to cut fish. I was really impressed with this knife. This is defiantly a great knife . The blade is flexible for great skinning . The blade is wide so you don't cut into the back bone when filleting. The edge stays really sharp . This is a super great fillet knife .

Coltello specifico per sfilettare il pesce, lama affilatissima di 22 cm e flessibile il giusto ,molto ben bilanciato e con un buon manico ergonomico in gomma dura antiscivolo. Il coltello si presenta con una linea sobria senza troppi fronzoli e una lunghezza sufficiente per la maggior parte dei pesci anche di taglia come quelli dei veri chef che ho usato in qualche corso di cucina.
