what are the ingredients?

Sambal Olek is listed as the first ingredient (35% or so) and that is made out of chili peppers, vinegar, salt and such and is not sweet. Then it is mixed with more vinegar, molasses, garlic powder an thus is slightly sweet. It is pretty spicy and used more as an ingredient in a sauce (like peanut or stir fry) or a dab on cheese and crackers, etc.

red chillies, sugar, molasses, onion, water, salt, vegetable oil, vinegar, lactic acid, fermented shrimp paste, tamarinde flavor, potassium sorbate, also contains crustaceans. I use Conimex Sambal Oelek, Badjak and Manis. Oelek is easy to find, Manis seems to be the hardest. I like Manis best.

I love the deep heat and sweetness combination along with the texture of shallots (I think). I like to mix a little kecap manis to add more sweetness and depth, fish sauce and/or soy sauce if I want it saltier, and black vinegar if I want brightness. I’ve mixed it in yogurt (and just ate it by spoonfuls) and soft cheese to enjoy in crackers. My housemate tossed some noodles in it for a light snack!
