Does the wheel spin 360 or is it fixed?

Yes the wheel does spin thru 360 deg so always travelling the correct way/direction.

How long are the bolts that are included?

As stated the bolts (4 supplied with washers and nuts) ae 4 inches including the head. I found them long enough to hold a wood reinforcement on each side of the wooden gate. Suggest depressing the wheel unit spring about half and inch in the gate closed position to facilitate gate bolting/locking. To do this, depress the spring before attaching to gate and clamp the spindle with a locking pair of pliers. I fitted two gates: 1 with the wheel to run over shingle drive - had to clear an ark path in the shingle: the other, between grass fields, had a downward slope on the open side - works fine.

Would these be suitable for bi folding gates please?

I am sorry I do not know. The wheel bracket holds the spindle 4 inches away from the gate surface allowing the wheel to swivel 360 degrees in either direction as it rolls, So, Maybe yes.

What is the height of the fixing holes from the ground?

Height depends on the distance of the gate post from the ground, my post is 65mm first bolts 185mm
