New main duty knife in the household
This knife has become the go-to knife for all culinary tasks in the household. Right out of the box, I was impressed by the knife's craftsmanship and solid build. The high-carbon stainless steel blade boasts exceptional sharpness and retains its edge remarkably well. Whether I'm slicing vegetables or dicing meats, this knife glides through effortlessly, making each task a breeze. The 20cm extra-broad blade provides ample room for smooth rocking motions while chopping herbs or mincing garlic. I found the broad blade especially useful when transferring ingredients from the cutting board to the pan, thanks to its generous surface area. One of the most striking features of this knife is its impeccable balance. The handle and blade are perfectly aligned, allowing for precise control and reduced hand fatigue during prolonged use. It fits comfortably in my hand, providing a secure grip, even when my hands are wet or greasy. This Victorinox knife is not only sharp but also incredibly easy to maintain. I appreciate that it's dishwasher-safe, although handwashing is recommended for preserving its longevity. The stainless steel construction ensures that it's resistant to corrosion, and I haven't noticed any discoloration or rust despite frequent use. Beyond its slicing and dicing prowess, this knife excels in delicate tasks like finely mincing herbs and deboning meats. Its versatility has significantly streamlined my cooking process, and I find myself reaching for it for virtually every task in the kitchen. If I were to offer any critique, it would be regarding the knife's lack of a sheath or blade cover for storage. I would have appreciated a protective covering to keep the blade in top condition when not in use. In conclusion, the Victorinox knife is a top-tier kitchen companion that delivers exceptional performance and precision. Its sharpness, versatility, and ergonomic design make it an indispensable tool for any cooking enthusiast or professional chef. If you're seeking a reliable and high-quality chef's knife that won't break the bank, look no further than this Victorinox masterpiece. Wish I bought this sooner.

Exceptional balance and power—the only chef's knife you'll ever need!
The 20cm blade is professional-grade and arrives with a razor-sharp edge that holds up remarkably well. Because it’s the extra-broad version, I have plenty of knuckle clearance on the board, and it makes light work of large vegetables like butternut squash or cabbage. The Fibrox-style handle provides a very secure, non-slip grip even when wet. It’s a five-star, high-quality essential that has quickly become the most-used tool in my kitchen!

Possibly the best chef's knife for the serious cook
I'm a big fan of the Victorinox knives; I like their ergonomic, high-friction, plastic handles. I like the sharpness and edge-retention. I like the sheer size of the knife. I like the balance and ease with which it rocks on your board, whether you're chopping parsley or cutting up butternut squash. Although this is harder-wearing than the very high-carbon knives, if you to clean it, dry it and put it away in a block or sleeve after use, and it should give you a lifetime of service.

Fantastic for the price
For those wondering, this knife is model number 5.2063.20, in case you wanted to look around the web for professional reviews and the like. It is exactly the same as the old 40520 model, which was rated "Best Overall" by Cooks Illustrated in the US and is the top-rated item on the whole of the Amazon US site at the time of writing, so head over there if you want hundreds of other reviews and a more extensive product description. Personally, I think this is a fantastic knife, and for this money it is simply a must-buy. I've been using my flatmate's Globals for the past two years, but having moved house I needed to get my own set of knives. This knife compares very well to the 20cm Global chef's knife. It is very, very sharp and very comfortable in the hand. The handle is very sturdy and solid, and has a very easy to grip texture even when wet. It also feels very well balanced and was heavier than I expected; both very good things. If you are looking for a knife in the sub-£100 range I'd say get one of these and spend the rest of the hundred on a couple of other Victorinoxes. You won't be disappointed.

Excellent quality kitchen knife
Can’t go wrong with the Victorinox knives. I’ve had these for a good 5 years now, quality is excellent and they are very good value for money.

A tactile knife
I don't think anyone would be disappointed with this knife. It's small, sharp, has a quality feel. Sitting next to my Spyderco and Gerber it will have a place. For an EDC it locks! But, be aware, there are two locking stages. The first doesn't! The second does. You need to know this if you intend, or have to, demonstrate its non locking behaviour! It's not an agressive knife, which is good: I can see it having a useful place in my car camping box. Worth a purchase at a pretty minimal price.

This was bought for a friend who is a chef. He knows his stuff and found this to be a good well known reliable brand, with an exceptional blade at an affordable price. He also bought with it a sharpening stone separately

This is the best knife I ever had. Victorinox knifes are the only ones I buy now because of the quality and how well they work. I also have pairing knifes in this brand and I only need that quality to get the job done.
