A little goes a long way!
I wanted this HOT spice for some Jammican recipes. The young lady who gave me the recipes is from Jammica and is an excellent cook. She advised me to start with a small of the spice and wear disposable gloves. I followed her directions and everything was really good!

Hot & Flavorful
Scotch Bonnet has a distinct taste to it that I love. I've seen most recipes toss a whole pepper in a stew to get some flavor and heat. When I tossed a whole pepper in some oxtail it definitely added the heat, but I didn't really get the flavor I was looking for. Once I actually cut the pepper I was amazed with the amount of flavor inside. So in my 7qt dutch oven, I only needed 1 pepper, but definitely need to cut it open or chop it to get that flavor. And while some comments say they didn't have much heat, I will say that the bag I got are absolutely on the hotter side of Scotch Bonnets. If you want hotter, you need to jump up to Reaper or Scorpions, but I prefer these, and will definitely buy again.

3 peppers are just mildly spicy
I used 3 these in my homemade jerk marinade and they were just mildly spicy.I did let the dried peppers soak in hot water prior and even left in the seeds .I think 4 peppers will give me the spice level and flavor im looking for.

Quality and SPICY!
I couldn't find scotch bonnets anywhere in Seattle (sadly no surprise there), but Amazon to the rescue! I made authentic Jamaican Jerk Chicken with red beans and rice. These chilies really added the much needed punch. Very easy to rehydrate in some boiling water for about 8 minutes and they're ready to go. This is a quality product that I will buy again.

These peppers are hard to find. Expensive but the quality is quite high

Live in a place with no scotch bonnets?
Then this item is the best from my research. Just soak them in a bit of water and very usable, and better than habaneros, in jerk sauce.
