Waterproof inner lining is a pvc sheet or waterproof coated thin/thick lining?

Waterproof lining -- these are very durable -- I wash them in the washer but just let them hang dry so they last. Fits adults very well -- also wipes clean on the front for several uses before you really need to wash. Very flexible as well.

Will spaghetti sauce slide off these bibs?

No. It is not that type of material. It is cloth, so the sauce will stick and soak in the material. So it will need to be washed.
