For the seal only function, can i use any bag?

There are special plastic bags (ot roll that you can cut to the size you need) that are used for these vaccum machines. You can use any brand, make sure that they are sold as for this purpose.

If you are buying for sous vide then go for it.

If you are buying this specifically for sous vide then go for it. It's sized to fit an average sized steak and will fit in the Stainless Steel rack that comes with the 11L Container that you bought to complete your Sous Vide set. Seal to seal it is 15cm wide and you will get around 21 cm depth depending where you put your seal. Without account for that then from the seal to the open side is around 23 cm
