I use half and half. I do warm it up slowly to 110 degrees and have the yogurt maker on with a towel wrapped around it so that it doesn't cool off the milk to much when I pour in the 110 degrees milk. Put lid on. I wrap mine loosely in a towel to help keep milk at 110.
