Trying to do a potato and lightbulb electric experiment with my kids do you recommend 12, 14, or 16?

I would recommend 14 gauge as it can fit most of your needs for electrical experiments.

Can this be used as a remote wire or a car amplifier?

Yes, you can remote wire power to the head unit as it most likely only needs 12V for power. As the the amplifier, it will depend our your Amp’s power rating and you will need to check your owners manual. 14AWG is capable of 30A but for short distance. You will need thicker (smaller gauge) cables if you want to go longer disntance.
